Last weekend, I cooked a light and hearty breakfast. I’m currently obsessing over poached eggs. When pierced with a fork, the luscious, silky, golden yolk oozes out in richness. Poaching an egg is something I would like to add to my repertoire.

I found it a bit intimating, so I wanted to challenge myself. I nailed it on my first try. hip hip hooray!

Home-style Potatoes with Poached Egg

Total Time: 40 minutes

Ingredients:

For the home-style potatoes:

5-6 potatoes
1 1/2 tsp parsley flakes
1 tsp garlic powder
1 tsp ancho chili pepper
1 medium yellow onion, chopped
2 tbs ghee (or butter), divided

For the poached eggs:
2 eggs
4 cups water
1 tsp white vinegar

Directions:

1. Wash and scrub the potatoes well. In a saucepan on medium-high, add the potatoes and enough water to cover it. Par-boil for approx. 15-20 mins. Cut the potatoes in bite size pieces.

2. In a cast iron or large saute pan on medium-high heat, add 1 tb of ghee (or butter and chopped onions. Cook for 5 minutes. Add the potatoes, parsley flakes, garlic powder, ancho chili pepper and the remaining 1 tb of ghee. Cook until golden brown, approx. 20 mins.

3. For the poached eggs: in a saucepan add the water and heat the water on low-mediumn heat until the water starts to simmer but not boiling. Add the white vinegar and stir. Crack an egg in a small bowl, and then gently slide into the pan of simmering water. Repeat with the 2nd egg. Poached the eggs for 6 minutes until the egg whites has mostly solidifies.

4. Spoon some potatoes on a plate and add the poached egg. Garnish with freshly crack pepper. Enjoy!

It is best to use fresh eggs but not necessary.

    Yum I’ve always wanted to try poached eggs and this picture makes it look so yummy, maybe I’ll experiment this weekend!
