Mushrooms with Sherry and Garlic Sauce

Mushrooms with Sherry and Garlic Sauce is a classic Spanish tapas dish that can be prepared and enjoyed in no time at all. It makes for a delicious summer treat. Serve with small forks or toothpicks.

Ingredients:

16 ounces button or cremini mushrooms
2 garlic cloves, minced
3 tablespoons extra-virgin olive oil
1/4 cup dry white wine
2 tablespoons dry sherry
1 teaspoon salt
1/2 teaspoon pepper
1 tablespoon fresh parsley, chopped

Directions:

1. Wash the mushrooms and remove any dirt or debris
2. In a medium pan over medium heat, add the oil and sauté the garlic about a minute. Add the mushrooms and sauté for two to three minutes.
3. Add the white wine and sherry, bring to a boil, then reduce heat to medium-low and simmer until liquid reduces by half, about 10 minutes.
4. Season the mushrooms with salt and pepper, then remove from heat.
5. Put the mushrooms in a serving dish and sprinkle with the chipped parsley.
