I have the easiest breakfast recipe that’s not only flavorful but quick to make with minimal clean-up. Stephen occasionally makes this for me for breakfast, and I cannot get enough!

This English muffin with tomato and melted mozzarella cheese recipe only has five ingredients! The other two ingredients are mayonnaise and dried basil herbs. Easy, right? The best English muffin I’ve tried is called Bays English Muffin. They are sold in the refrigerated dairy cases of major grocery stores and must be kept in the fridge. The quality and taste are superior to the English muffins sold in the aisle section.

I first heard about Bays English Muffin when they attended and hosted breakfast at the IFBC event last year. If you get a chance, definitely try Bays, and you’ll taste the difference!

This easy breakfast English muffin is quick to make and packs a flavorful punch.

Ingredients:

2 English muffin
1 tablespoon mayonnaise (we recommend Hellmann's Real Mayonnaise brand)
8 tomatoes slices (1-2 small tomatoes)
1/2 cup shredded mozzarella
1/4 teaspoon dried basil herb

Directions:

1. Spread mayonnaise on the English muffin and add 2 slices of tomatoes on each muffin. Sprinkle mozzarella cheese and dried basil herb on top. Placed the English muffins in the convection toaster oven and toast for about 10 minutes or until the cheese is melted. Serve immediately.
