Thai Salad with Peanut Dressing

Now that the holidays and festivities are over, I’m ready to start the new year with a clean slate a.k.a clean eating. If one of your resolutions is to eat healthy or incorporate more salads into your meals, this Thai Salad with Peanut Dressing recipe is for you!

One of my favorite salad is Thai Crunch from California Pizza Kitchen. Crisp veggies and creamy peanut dressing gives a bit of an Asian flare. I wanted to recreate the salad and came across this recipe from Once Upon a Chef’s Thai Crunch Salad with Peanut Dressing. The salad is very easy to put together and you can save a lot of prep time by buying prepared ingredients such as pre-shredded coleslaw mix, pre-shredded carrots and frozen edamame. I cannot tell you how delicious it is!

Thai Salad with Peanut Dressing

Yield: 4 servings

Prep Time: 10 minutes

Total Time: 25 minutes

Thai Salad with Peanut Dressing is filled with crisp veggies and creamy peanut dressing to give this salad a refreshing taste.


For the Thai peanut dressing:

1/4 cup peanut butter (creamy or crunchy)

2 tablespoons rice vinegar

2 tablespoons fresh lime juice

3 tablespoons canola oil

1 tablespoon soy sauce

2 tablespoons honey

2-1/2 tablespoons sugar

2 garlic cloves, roughly chopped

1-inch square piece fresh ginger, peeled and roughly chopped

1 teaspoon salt

2 tablespoons fresh cilantro

For the salad:

4 cups pre-shredded coleslaw mix

1 cup pre-shredded carrots

red bell pepper, julienned

2 small Persian cucumber, cut length-wise and thinly sliced 

1 cup frozen edamame, thawed

2 medium scallions, thinly sliced

1/2 cup loosely packed chopped fresh cilantro


To make the peanut dressing, combine all ingredients in a blender except cilantro and blend until smooth. Add the cilantro to the blender and pulse until the cilantro is chopped. Pour the dressing in a container and set aside in the fridge.

To make the salad, combine all ingredients together in a large bowl and drizzle the peanut dressing over the top.

It is best to drizzle the peanut dressing if you are serving the salad immediately otherwise the salad will get soggy if you let it sit for a few hours. If you like it soggy, by all means, pour the dressing! :)
