One of our New Year’s resolution is eating Paleo or Whole30 for one month in January. I’ll be honest with you, it was hard the first week, but it slowly got easier as the day goes by. We did the 90/10 rule. That 10% exception, we allowed ourselves to drink espresso (no sugar or dairy added) and wine. Now that the month is over, we want to continue incorporating more delicious and wholesome recipes, but also indulge in foods we still enjoy in moderation. We both lost weight and definitely have less cravings for breads, dairy, and sugar.

I guarantee this dish will be a family favorite. My wife couldn’t stop raving how delicious the meal was. She requested me to make it again the following week. Since Valentine’s Day is around the corner, if you are looking for a fancy meal to cook a romantic dinner for two at home, this recipe will surely impress your significant other.

I highly recommend using this cast iron (affiliate link), it cooks and browns the chicken and veggies evenly. If you don’t have a cast iron, a large skillet pan will do.

One Pot Crispy Chicken Thighs with Kale and Sweet Potatoes

Yield: 6 servings

Prep Time: 5 minutes

Cook Time: 1 hour 10 minutes

Total Time: 1 hour 15 minutes

Ingredients:

6 skin-on bone-in chicken thighs

1 teaspoon salt

3/4 teaspoon black pepper

1 teaspoon allspice powder

1 teaspoon dried thyme

1/2 teaspoon cinnamon powder

1/2 teaspoon cumin powder

5 slices of nitrate-free bacon, cut into 1/2 pieces

1 large sweet potato, diced into 1-inch cubes

2 tablespoons garlic, minced (4 cloves)

1 large jalapeno diced

1 large handful of chopped kale

2 tablespoons of coconut oil (or olive oil)

 

 

Directions:

  1. Pre-heat the oven to 350 degrees F.
  2. Season the chicken thighs with the salt, pepper, allspice, thyme, cinnamon, and cumin.  Set aside and let come to room temperature while you prepare everything else.
  3. In a large oven safe skillet over medium heat, cook the bacon until just crisp, about 8-10 minutes.
  4. Remove the bacon from the pan with a slotted spatula or spoon and set aside on a paper towel.
  5. Add the diced sweet potatoes and cook in the bacon fat until soft, about 10 minutes.
  6. Add the garlic and diced jalapeno and cook until soft, about 2-3 minutes.
  7. Stir in the kale and cook for another 3-5 minutes until softened.  Remove everything from the pan and set aside.
  8. Increase the heat to medium high and add 2 tablespoons of coconut oil.  Once the oil is hot, dry off the chicken thighs with paper towel and carefully place skin side down.  Cook for 10 minutes until skin is golden and crisp.
  9. Flip the chicken over and add everything back to the pan.  Spread everything around the chicken so that the chicken skin is exposed.  Transfer the pan to the oven and let cook for 30 minutes until the chicken reaches temperature of 165 degrees F.
  10. Plate and serve immediately.

  1. I for sure wouldn’t mind doing the Whole30 if my dinners looked like this!  Crispy chicken is my weakness!
