Dungeness Crab Fettuccine with Gremolata

The first time Stephen made this crab fettuccine with gremolata, I was impressed how beautiful he presented the dish to me. He already has my heart, but he won me over again!

Butter, wine, and lemon make a flavorful sauce that coats the pasta lightly. Also, sprinkling gremolata with toasted panko gives a nice crunchy texture to this elegant dish. Gremolata is one of my favorite herb condiment made of parsley, lemon zest, and garlic. I love the bright green parsley and citrusy notes from the lemon zest. This classic Italian herb condiment is a traditional accompaniment to the Milanese dish, Osso Bucco Alla Milanese (Braised veal shank). It’s also terrific with fish and seafood.

Dungeness crabmeat is lightly sweet in taste and delicate in flavor. You can easily buy crab meat that’s fully cooked and ready to use. I’ve seen them sold in a sealed container at Costco and Trader Joe’s. Check your local grocer if they carry it. Crab meat especially Dungeness crab can be expensive, but it’s great to splurge for a special occasion. For us, we are lucky to live in Seattle where recreational crab fishing is open to the public (fishing or shellfishing license required) during the summer. The max we can catch is 5 Dungeness crab (males) a day. I remember one summer season, Stephen caught a total of 36 Dungeness crabs! We would cook them, chuck them, and freeze the crab meat in air tight sealed bag. Oh, boy was that a lot of work peeling and picking out the crab meat!

Dungeness Crab Fettuccine with Gremolata

Yield: 4 Servings

Total Time: 30 minutes

Dungeness Crab Fettuccine with Gremolata is a wonderful dish that's quick and easy to make. You'll have an elegant dinner in 30 minutes or less!


1 pound fettuccine pasta

1 pound crab meat

1/4 cup dry white wine

3 tablespoons unsalted butter

2 tablespoons lemon juice


Black Pepper

For the gremolata-panko:

4 tablespoons finely chopped parsley

1 clove of garlic, finely minced

lemon zest (from 1 lemon)

1/2 cup panko (or dried breadcrumbs), toasted



Cook the fettuccine pasta according to the package instructions.

In a large sauté pan on medium-high heat, add the wine, butter, lemon juice and a pinch of salt and black pepper. Once the sauce is heated, add the pasta and mix until evenly coated. Add the crab meat and gently mix.

Plate the pasta and top it with gremolata-panko.
