If you are looking for a nice hearty weekend brunch, this delicious recipe for Smoked Salmon Hash with Poached Eggs is a favorite at our house, especially on game day! 

A must buy anytime we go to Pike’s Place is smoked salmon.  This dish is a tribute to one of the best brunch dishes I have had in the market at Steelhead Diner.  Their version is called Eggs Cordoba.

Smoked Salmon Hash with Poached Eggs

Yield: 2-4 servings

Prep Time: 10 minutes

Cook Time: 15 minutes

Total Time: 25 minutes

This delicious and hearty recipe for Smoked Salmon Hash with Poached Eggs is a winner, especially on game day!

Ingredients:

1/3 pound smoked salmon
1 pound red potatoes, diced into one-inch pieces
1/2 cup olive oil (for frying)
1 red bell pepper, diced
1 onion, diced
1 jalapeno, diced (optional)
1/4 cup parsley, chopped
4-8 eggs, poached

Recipe for the mustard nage is below

Directions:

1. In a large pot of boiling water, boil the diced potatoes for 8-10 minutes. Drain, set aside.
2. In a large frying pan or skillet, add the oil. When the oil just begins to smoke, add the potatoes and fry until golden and lightly crisp.
3. Drain off most of the oil from the pan and add the diced bell pepper, onion, and jalapeno (optional). Continue frying until the veggies are just tender but still crisp.
4. Break up the smoked salmon and add to the pan. Cook another 3-4 minutes until the salmon is warmed through.
5. Toss in the parsley and serve in bowls topped with 1 or 2 poached eggs and a dollop of the mustard nage. Emjoy!

    Mustard Nage

1/2 cup mayonnaise
1/2 tablespoon dijon mustard
1/2 lemon, juiced
1 teaspoon tarragon
1 teaspoon dill
1 teaspoon basil
salt and pepper to taste
water (used to thin to desired consistency)

  1. This recipe is uh-mazing. Anything smoked salmon gets me, then you add potatoes and I am in love :). I’m going to try this for Albert and I this weekend :). Hope yall are doing well!!!
