Summer is here, and this cool Perfect Protein Salad is a great recipe to start the season.It is quite a long story, but my discovery of Perfect Protein Salad at a local grocer’s deli counter actually set a series of events into motion that ultimately led to recreating the recipe and having it to share with Donna in conversation on the day we first met. Funny how things work that way. ;)

Don’t let the number of ingredients intimidate you. This is a very easy recipe and is a great opportunity to put those cutting skills to work. It is also a great go-to dish for potlucks or parties.

You can make ahead of time and store the Protein Salad in an airtight container for up to 3-4 days refrigerated. Enjoy!

Perfect Protein Salad

Yield: 8 servings

Perfect Protein Salad

Ingredients:

1/2 cup Bob's Red Mill sorghum, prepared according to package instructions and cooled to room temperature

1 can chickpeas, drained and rinsed

1 medium carrot, julienned

4 green onions, minced

1/2 red bell pepper, minced

1/4 red onion, minced

1/4 cup mayonnaise (recommend Hellmann's brand)

1/4 cup apple cider vinegar

1 cup cottage cheese

1-2 small cloves garlic, minced (optional)

1/2 cup parsley, minced

1/4 cup fresh dill, minced

1 teaspoon salt

fresh black pepper, to taste

Directions:

  1. Combine everything and mix well.  Yes, it is that easy!
